Pan-fried cod with prawns on white bread

Lemon mayonnaise

  • Mix the mayonnaise with the lemon juice, lemon zest and mustard and season to taste with salt and pepper.

Green asparagus

  • Snap off the woody ends and halve the spears lengthways.
  • Fry in the olive oil over a high heat for 3–4 minutes, until lightly coloured but still firm. Season with salt.

Cod and prawns

  • Beat the egg in a bowl. Cut the cod into 4 pieces, season with salt and pepper and dust lightly with flour, before you dip it in egg, followed by panko breadcrumbs.
  • Heat the oil and butter in a pan and fry the cod over a medium heat for 3–4 minutes on each side, spooning the foaming butter over the fish.
  • Add the prawns for the last minute and warm them through in the butter. 
  • Toast the bread, butter it and spread with lemon mayonnaise.
  • Arrange the asparagus on top and place a piece of cod on each slice.
  • Scatter over the prawns, finish with dill and black pepper and serve with a lemon wedge.
