Ingredients: 400 g Norwegian Fjord Trout fillet; 1 orange; 3 tbsp orange juice; 200 ml olive oil; 4 tbsp parsley, fresh curled; 2 tbsp pine nuts; 100 g rocket (arugula lettuce); sea salt; pepper

In this recipe Fjord Trout is served with orange wedges, pine nuts, rocket and a warm orange marinade. Simple can also be tasteful.

Cut the Fjord Trout into slices and orange into wedges.
Heat orange juice and olive oil in a pan, and add chopped parsley and pine nuts.
Place the Fjord Trout and orange on a plate and sprinkle with rocket.
Pour the marinade over, and season with salt and pepper.

Serve immediately.
