Norwegian herring with apple and brown butter

  • Use a blowtorch to scorch the fillets and keep warm.
  • Mix the butter with the other ingredients and emulsify. Remove from the heat.
  • Peel the apple and cut into small cubes. Discard the core. Marinate with the other ingredients and season.
  • Spread the brown butter and place the fillets on top.
  • Add the apple before finally sprinkling with the Panko breadcrumbs and lime zest.
