Ingredients
Preparation
- Preheat the oven to 200 °C. 
- Cut the halibut in servings and place on a baking tray with baking paper. 
Topping
- Finely chop anchovy and mix with room temperature butter, breadcrumbs and grated cheese to an even mix. 
- Spread the mix over the halibut and bake in the oven for approx. 20 minutes. The core temperature should be 52 °C. 
Salad
- Thinly slice red onion, cut cherry tomato in half and tear the salad. 
- Dice bread and toss in olive oil and chopped dill. 
- Pan-fry the bread crispy and golden. 
- Combine red onion, cherry tomato, salad and bread. 
Dressing
- Combine egg yolk, mustard, anchovy and garlic in a food processor to an even mass. 
- Add soy oil a little at a time while the machine is running. It should start thickening. 
- Stir in crème fraîche. 
Serve baked halibut with salad and dressing.
