Preparation
- Cut the saithe into portions, and sprinkle with salt and pepper on all sides.
- Finely chop dill, and cook the potatoes with a little over half of the dill.
- Cut chili in strips, finely chop red onion, basil and parsley and mix with the rest of the dill.
- Brush the aluminium foil with oil.
- Spread half of the chili, onion and herbs on each foil, place the saithe over and cover with the rest of the chili, onion and herbs.
- Drizzle with white wine, close the packets and place on the grill.
- Grill until the fish is done, approx. 10 minutes. Serve with dill potatoes on the side.
