Nuggets with Norwegian saithe

Crispy fried saithe, also call nuggets, is simple and easy to make. Serve with pommes frites and a salad.

Ingredients

Preparation

  • Cut the saithe so you get approx. 4 pieces per portion.
  • Whisk egg lightly and mix with sweet chili sauce in a bowl. In a second bowl, add the cornflakes.
  • Heat a pan with butter and olive oil.
  • Cover the saithe first in the egg mix, then in cornflakes. Fry the nuggets in butter and olive oil for 3-4 minutes on each side.

Dip

  • Make a mayonnaise by mixing egg yolk and apple cider vinegar, and add rapeseed oil a little at the time while stirring. You can also use an immersion blender to emulcify the ingredients. 
  • Season with sesame oil, salt and pepper.

To serve

  • Make the fries.
  • Peel carrot and cut in strips.
  • Divide the salad in whole leaves, wash and place on a plate.
  • Serve the saithe nuggets with dip sauce, carrots strips, salad leaves and pommed frites.
