Pickled coleslaw salad
- Mix vinegar, sugar, soy sauce and sesame oil.
- Cut the vegetables into thin strips and mix with the pickle sauce, let it sit while making the burgers.
Saithe burgers
- Cut the fish into small pieces and place them in a food processor.
- Add salt and run the machine until the dough is smooth – this only takes a few seconds.
- Pour in the milk in three rounds, and let the machine run each time so the milk is fairly mixes and the dough mix stays smooth.
- Add potato flour, minced garlic, pepper and chives.
- Fry one small fish burger and taste if the spice levels are to your liking.
- Form flat burgers and fry them in butter approx. 3 minutes on each side.
- Assemble the burgers with coleslaw, vegetables and sauce of your choice.
