Brochettes of Norwegian salmon

When the good weather arrives, outdoor gatherings with family and friends are the order of the day and lighter dishes are desired. These salmon skewers you can cook on the grill is perfect for those occasions!

  • Cut the mango in small cubes, chop the coriander leaves, the pepper and the onion finely. Mix them together in a small bowl.
  • Season the salad by squeezing the orange over it and drizzle over plenty of olive oil. Season to taste with salt and pepper.
  • Cut the salmon in slices of 100 g each.
  • Thread the salmon slices onto the wooden skewers. Make sure to have soaked the skewers in water beforehand, so they do not burn on the grill.
  • Brush the salmon and the grill with oil. Season the salmon with salt and pepper and place the skewers on the hot grill.
  • Grill the salmon on both sides for 8 minutes.
  • Once the salmon is cooked, place it on a serving board or platter. Cover it in the mango salad and serve.
