Open salmon patty sandwich with mango sauce

A juicy salmon patty served open on a light bun, with crisp lettuce, cucumber and a fruity mango and honey sauce.

Preparation

Salmon patties

  • Blitz one third of the salmon to a fine paste in a food processor and cut the rest into small dice.
  • Combine with the egg, breadcrumbs, shallot, dill, mustard, lemon zest, salt and pepper. Chill for 10 minutes, then shape into 4 patties.
  • Heat the oil in a pan and fry the patties over a medium heat for 4–5 minutes on each side, until golden and just cooked through.

Mango and honey sauce

  • Purée the mango, then stir in the mayonnaise, honey and lime juice. Season to taste with salt.

Assembly

  • Slice the cucumber thinly. Halve the buns and toast. Butter the buns.
  • Spread the bottom halves with sauce, add a lettuce leaf and the cucumber slices. Place a salmon patty on top, spoon over the remaining sauce and serve open, with the toasted lids alongside.

Tips: Short of time? Use 4 ready-made or frozen fish cakes instead and cook them according to the instructions on the packet.
